RECIPES: Mrs Moroni Dill Pickles, Bread and Butter Pickles

My love of pickles goes back a long time! One Christmas my Grandma Toots even gave me a gallon jar of my favorite dill pickles for a Christmas present. My best gift that holiday! She also baked me my own pumpkin pie but that’s just how she was.

I begged my mother-in-law, Grace Weese, for these pickle recipes after a Thanksgiving banquet. Patricia Bott from Brigham City, Utah gave Grace the recipe for Mrs Moroni Dill Pickles on August 19, 1963. These pickles are so crisp it takes effort to bite through it. The best dill pickle ever. This one is not processed so plan on making a small batch to keep in the fridge. But, they won’t be there for long!

Med Sandall from Park Valley, Utah shared her Bread and Butter Pickles with Grace in the same year. This sweet and salty pickle is great on sandwiches, chopped in salad and diced in deviled eggs.

Although high in sodium, pickles have nutritional value. They are low in calories and fat, and provide vitamin C, calcium, fiber and protein to a healthy diet.

RECIPES: Honey Lemonade, Berry Breeze,  Tangy Tomato Juice

Many scientific studies have established a link between consuming soda drinks and health conditions like weight gain and diabetes. But new research by Shakira Suglia, Sc.D., and colleagues from Columbia University, the Harvard School of Public Health and the University of Vermont concludes these drinks can make children hyper, irritable and unable to focus. Published in Journal of Pediatrics, the researchers have found soda pop and processed juice drinks can also make children aggressive, violent and even suicidal.About 3,000 five-year-old children enrolled in the Fragile Families and Child Wellbeing Study participated. The children came from 20 large U.S. cities, and their mothers reported information on their soft drink drinking patterns and their behavior.
It was found 43 percent of children consumed at least one serving of soda or other soft drink per day, and four percent consumed four or more servings daily. The increase in soda consumption among the children corresponded to aggression issues and attention disorders became more pronounced. “We found that the child’s aggressive behavior score increased with every increase in soft drinks servings per day,” says Dr. Suglia.
“Soft drinks are highly processed products containing carbonated water, high-fructose corn syrup, aspartame, sodium benzoate, phosphoric or citric acid, and often caffeine, any of which might affect behavior,” say the authors of the Journal of Pediatrics study. Although this study cannot identify the exact association between soft drink consumption and problem behaviors, limiting or eliminating a child’s soft drink consumption may reduce behavioral problems.

Fun drinks made with healthy ingredients can replace soft drinks and processed juices. Try these easy-to-make nutritious beverages and dress them up with fresh fruit or veggies. Add a small slice of lemon, lime or orange for color in Honey Lemonade. Fresh blueberries or slices of strawberries are great to top Berry Breeze. Long thin celery or carrot sticks make excellent stir sticks for kids of all ages.

RECIPES: Vegan Apple Granola, Vegan Spicy Sausages, Vegan Scrambled Tofu

We all have heard breakfast is the most important meal of the day, but according to an International Food Information Council Foundation survey, just 44 percent of Americans eat breakfast everyday.
Regular breakfast eaters consume higher intakes of fiber, calcium, vitamins A and C, riboflavin, zinc and iron and eat less calories, fat and cholesterol during the day than those who skip breakfast.
The Arthritis Foundation reports skipping breakfast can lead to an increase in LDL levels of cholesterol and that going without breakfast means you will likely eat more throughout the day.
If you do miss breakfast, you may be jeopardizing your health in the long run. People who skipped breakfast were more resistant to insulin, increasing their risk of developing diabetes, according to a study at the University of Nottingham in England.
Whole grain cereal is always perfect for breakfast. Vegan Apple Granola is fun and easy to make and even more fun to eat.
Vegan Spicy Sausages served with Vegan Scrambled Tofu is a healthful and filling breakfast. Freeze the extra sausages to add to spaghetti sauce, crumble on top of whole wheat pizzas or tuck into fresh whole grain biscuits for another breakfast.

RECIPES: Holiday Fruitcake, Christine’s Applesauce Christmas Loaves, Norwegian Christmas Bread

Naturally sweet dried fruits and crunchy nuts combine to create nutritious holiday fruitcakes and breads. Through the years fruitcake has gained and unfortunate reputation for being heavy and tasteless, but the following moist fruitcake and fruity breads look elegant, taste delicious and offer a good source of protein, iron and dietary fiber.
Holiday Fruitcake is a traditional fruitcake recipe and requires a lengthy cooking time. Bake in one large Bundt pan or two loaf pans to share with family and friends.
Try Christine’s Applesauce Christmas Loaves for a healthy twist on the original. This easy to make fruitcake is more like banana bread than fruitcake and has a sweet, nut topping.
Norwegian Christmas Loaves take making bread to a new level. The recipe looks complicated but it really isn’t, just a few steps. The effort will be worth it.

Research at Tufts University has uncovered the anti-aging powers of blueberries and other dark colored fruits and vegetables.

James Joseph, a nutrition researcher at the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts and author of “The Color Code” wrote, “Many of the ailments that we’ve come to fear – cancer, heart disease, diabetes and osteoporosis among others – are not inevitable at all, by fortifying our diets with colorful fruits and vegetables, we may prevent many of these diseases from striking in the first place.”
In 1999, Joseph first reported blueberries can help slow memory loss and improve coordination, thanks to the antioxidants that give them their dark blue color. Improvements in balance were also significant.

According to the Blueberry council, http://blueberrycouncil.org/nutrition.php ,blueberries are an excellent source of vitamin C. A one cup serving provides 14mg or almost 25 percent of the daily requirement. They are also a good source of dietary fiber and manganese.
Blueberries rank among the highest on per serving basis of antioxidants with 6,552 micromoles. Substances called polyphenols give blueberries their blue hue and are the major contributors to the antioxidant activity of blueberries.

May is National Barbecue Month, according to statesybolsusa.org, but many people are unaware that grilling some foods can produce cancer-causing compounds.

Heterocyclic amines or HCAs are produced during the cooking of many animal products. In January 2005 the federal government officially added HCAs to its list of carcinogens.
The Cancer Project, Physicians Committee for Responsible Medicine, is a collaborate of physicians, researchers and nutritionists who educate the public about the benefits of a healthy diet for cancer prevention and survival.

They determined that many commonly grilled foods contain alarmingly high levels of HCAs. The five worst foods to grill are chicken breast, well done steak, barbecued pork, salmon and hamburger.
HCAs form when creatine, an amino acid found in muscle, and natural sugars found in meats, are heated during cooking. Grilling at a high heat and for long cooking times increase this risk.
Nearly all meats, including chicken and fish, produce significant amounts of HCAs when grilled. When cooked on the grill, chicken produced more than 10 times the amount of HCAs found in grilled beef.
The Cancer Project doesn’t want you to give up grilling but they want you to try alternatives to safer grilling. Grilled soy-based veggie burgers, veggie brochettes, portabella mushroom ‘steaks’ and other vegetarian foods contain no or negligible levels of HCAs when grilled.
Marinating meats before grilling may reduce cancer-causing substances that occur when meat is charred over high heat. Some marinades contain antioxidants and vitamins that may offer protection against heart disease and cell and tissue damage.
