Rae Udy is a former columnist for the Longview News-Journal, in Longview, Texas.  Now answering the most often asked questions concerning a vegetarian lifestyle in this blog, her articles contain current health information relating to a vegetarian diet.  She has provided  nutritious and delicious vegan and vegetarian recipes for readers to try for over twenty-two years.

With increased awareness of the dangers in the food supply, a high percentage of Americans and Europeans are seeking alternatives to a meat centered menu. This timely but somewhat controversial subject of vegetarianism is treated in a non-threatening manner, with no moral judgments, letting the readers make their own conclusions with the facts provided. The concern from mad cow disease and Avian Flu is real and people are ready to reduce or eliminate these foods.

All recipes, from appetizers to desserts, are low in fat and cholesterol. Udy concentrates on meatless main dish recipes from a variety of cultures and low-calorie desserts because these are requested most often from her readers. Local chapters of the American Heart Association, the American Cancer Society and the Diabetes Foundation have all contacted Udy to request she write a feature article for them. She is a member of the East Texas Writers Association and has served as an officer in the past.
