Dried Tomato Appetizer

INGREDIENTS
4 Tablespoons dried tomatoes
1/2 (one-half) cup virgin olive oil
1/2 (one-half) cup feta cheese pieces
1 Tablespoon fresh parsley, chopped fine
4 slices whole grain bread
1 Tablespoon Parmesan cheese

METHOD
Combine dried tomatoes, olive oil, feta cheese and parsley together in a jar with a lid. Shake well and refrigerate until twenty minutes before serving. Preheat oven to 350 degrees. Place bread on oven racks and toast two to three minutes or until golden brown on top side. Open oven and carefully turn oven bread. Sprinkle each slice with a small amount of Parmesan cheese. Close oven door and cook two to three minutes longer or until bread is golden brown and cheese is melted. Cut toast into quarters and serve with tomato mixture. Serves four.
