Meatless Soy Chili

INGREDIENTS
1 16-ounce can soybeans
1 16-ounce can pinto beans
1 tablespoon chopped fresh garlic
1 medium onion, chopped
1 tablespoons olive oil
1 cup tofu, cubed
2 teaspoons chili powder
? (one-half) teaspoon oregano
1 bell pepper, seeded and chopped
1 cup tomato sauce
1 medium fresh tomato, chopped

METHOD
Open beans and drain. Rinse with cold water and set aside. Also rinse tofu in cold water and slice into one-half inch cubes. In a large skillet, saute garlic and onions in oil. Add prepared tofu and cook lightly. Stir in spices and peppers and cook two minutes. Add tomato sauce and chopped tomatoes. If sauce is too thick, thin with small amount of water. Simmer for about 20 minutes to allow the tofu to absorb the flavors. Add beans and simmer gently for 15 minutes. To serve, top bowls with finely chopped onion, green pepper and shredded low-fat cheese. Yields six servings.
