Summer Spinach Salad

1/4 (one-quarter) cup olive oil
1/4 (one-quarter) cup red wine vinegar
2 teaspoons honey
1/8 teaspoon black pepper, if desired
5 cups cleaned torn spinach leaves, stems removed
1 cup bite-size pineapple wedges
1/2 (one-half) cup dried tart cherries
1/2 (one-half) cup thinly sliced red onion
1/4 (one-quarter) cup crumbled Feta cheese

Combine oil, vinegar, honey and pepper in a small bowl and mix well. Chill until ready to serve. Combine spinach with pineapple, cherries and onion in a large salad bowl. Spoon dressing over spinach mixture and toss well. Serve topped with Feta cheese, if desired. Yields six servings.
