Cucumber Yogurt Salad

1 pint plain yogurt or soy yogurt
4 medium cucumbers, peeled and sliced thin
1 Tablespoon honey or maple syrup
2 Tablespoons lime juice
1 teaspoon fresh cilantro, chopped fine
1/4 (one-quarter) teaspoon paprika
Fresh lettuce or spinach leaves

Stir together all the ingredients, except paprika and lettuce. Chill for several hours before serving. Dust the top lightly with paprika just before serving. Serve on fresh lettuce or spinach. Yields eight servings.
