Light Peach Melba

4 fresh Freestone peaches
1 Tablespoon lemon juice
2 teaspoons brown sugar
2 teaspoons unsalted butter

Cut peaches in half and remove pits. Place them, cut side up in a lightly buttered ovenproof dish or pie pan. Drizzle lemon juice over peaches to prevent browning. Sprinkle sugar over peaches. Place a small piece of the butter in the center of each peach half. Bake in preheated 350 degree oven until tender and lightly browned, approximately 20 minutes. Serve warm with a small scoop of Frozen Peach Yogurt and a tablespoon of Raspberry Sauce. Yields eight servings.
