Frozen Peach Yogurt

4 cups peaches, peeled and sliced
1 Tablespoon lemon juice
2 cups low-fat plain yogurt
1/2 (one-half) cup honey
1 teaspoon vanilla

Dip fresh peaches into boiling water for one minute. Plunge into ice cold water for another minute. The peeling will come off easily. Cut each peach in half and remove pit. Slice thin and drizzle with lemon to prevent browning. Mix yogurt, prepared peaches, honey and vanilla in a large bowl. Blend until smooth and mixed well. Pour into ice cube trays and freeze about four hours. If possible, beat one or two times before frozen for a creamier texture. Yields one quart.
