Portabella Burgers

4 large portabella mushrooms
1 Tablespoon olive oil
1 Tablespoon fresh parsley, minced
1 garlic clove, peeled and chopped fine
4 whole wheat burger buns
1 cup shredded lettuce
4 Tablespoons Dijon mustard

Wash mushrooms and pat dry. Mix olive oil, parsley and garlic together. Brush a small amount of the oil mixture onto the underside of each mushroom. Place oil side up and grill over hot coals until browned, about five minutes. Carefully turn over and cook a few minutes more. Remove from grill. Spread buns with mustard and top with lettuce and hot mushrooms. Serves four.
