Chickpea Nut Burgers

2 fifteen-ounce cans unsalted chickpeas or garbanzo beans
1/2 (one-half) cup chopped pecans
2 grated carrots
2 Tablespoons chopped onion
2 eggs or egg substitute
2/3 cup fine whole grain cracker crumbs
2 Tablespoons peanut or vegetable oil

Open chickpeas and rinse well with cold water. Drain and rinse well in colander. Combine chickpeas, pecans, carrots and onion in blender or food processor container. Process on low speed until chickpeas are mashed. Pour into a mixing bowl and add eggs and cracker crumbs. Mix well and set aside for ten minutes. Spoon about one-third cup of mixture onto lightly oiled medium hot griddle or fry pan and spread with spoon to form a four-inch burger patty. Cook about five minutes or until brown and crisp. Carefully turn and cook other side, adding cheese if desired. Serve on burger buns. Yields eight large cutlets or patties.
