Quick Irish Soda Bread

2 ounces currants or raisins
1 1/2 (one and one-half) fluid ounces Irish whiskey
1 1/2 (one and one-half) cups unbleached white flour, sifted
1 teaspoon salt
1 1/2 (one and one-half) teaspoons baking powder
1 teaspoon baking soda
1 tablespoon brown sugar
2 cups low fat buttermilk or soy substitute

Soak currants in whiskey until plump, at least one hour. Sift dry
ingredients together. Stir in currants and whiskey. Stir in
buttermilk, making a stiff batter. Spread batter into a greased 8-inch
round cake pan. Bake in a preheated 350 degree oven until well browned
and firm, about 45 minutes. Remove from oven and cool 10 minutes.
Invert and slice into pie slices to serve. Yields one loaf.
