Low-Fat Cream Cheese Frosting

8 ounces soft low-fat cream cheese
2 Tablespoons soymilk or milk
1 1/2 (one and one-half) Tablespoons lemon juice
Finely ground rind from one-half lemon
1/3 to 1/2 (one-half) teaspoon powdered stevia extract, to taste
1 Tablespoon honey

Soften cream cheese with milk in a bowl. Beat in lemon juice, lemon rind, stevia extract and honey. Whip until thoroughly blended and creamy. Frost cool Carrot Cake.
