Vegan Sloppy Janes

INGREDIENTS
1 cup Textured Soy Protein (TSP or TVP)
1 cup boiling water
1 Tablespoon vegetable oil
1 medium onion, chopped
1 green pepper, chopped
1 cup cooked brown rice
1/4 (one-quarter) cup barbecue sauce
4 whole grain buns

METHOD
In a small bowl, pour boiling water over TSP and set aside for five minutes. Heat oil in large skillet over medium-high heat. Add onion and green pepper and cook two minutes. Add prepared TSP and cook three minutes or until dry. Add rice and barbecue sauce. Simmer 10 to 15 minutes, until heated through. Serve hot on buns to four.
