Bean Burrito Roll

INGREDIENTS
1 8-inch whole wheat tortilla
2 Tablespoons no-fat or vegetarian refried beans
2 Tablespoons chopped tomato
2 Tablespoons shredded carrot
1 Tablespoon shredded low-fat Cheddar cheese

METHOD
Spread beans on one side of tortilla. Place on microwave safe plate and sprinkle with remaining ingredients. Cook on High for 15 to 30 seconds or just until cheese melts. Remove from microwave. Cool a few seconds and roll in cigar shape to serve one.
