Zucchini Bread

2 eggs
1/2 (one-half) cup vegetable oil
1 cup sugar
1 teaspoon vanilla extract
1 1/2 (one and one-half) cups whole wheat pastry flour
1/2 (one-half) teaspoon each: cinnamon and nutmeg
1 1/2 (one and one-half) teaspoons baking soda
1/2 (one-half) teaspoon baking powder
2 cups shredded zucchini

Preheat oven to 350 degrees. Beat eggs until frothy. Add oil and mix well. Blend in sugar and vanilla. Mix thoroughly. Add dry ingredients, stirring just until moistened. Fold in zucchini. Pour into lightly oiled or sprayed bread pan. Bake one hour or until toothpick inserted in center comes out clean. Yields one loaf.
