Soy Nuts

INGREDIENTS
3 cup whole dry soybeans
2 quarts cold water
Sea salt

METHOD
Soak soybeans overnight in water. Drain well and spread evenly on a lightly oiled cookie sheet. Sprinkle with salt. Bake in a 300 degree oven, shaking the pan every 15 minutes for about one hour or until soybeans are crisp and lightly browned. Yields about four cups soy nuts.
