Gingerbread Waffles

1/3 cup molasses
1/3 cup melted butter
2 eggs
1 cup buttermilk
1 cup white unbleached flour
1 cup whole wheat flour
1/2 (one-half) teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 (one-half) teaspoon nutmeg
1/2 (one-half) teaspoon salt
1 teaspoon shredded fresh ginger

Combine molasses, butter and eggs and whisk until smooth. Blend in buttermilk. Sift together white flour, wheat flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt into a mixing bowl. Stir in ginger. Make a well in center of dry mixture and add molasses mixture, beating quickly just until smooth. If batter is too thick, add a little more buttermilk. Bake in your waffle iron until a dark golden brown. Yields eight waffles.
