Spicy Coleslaw

1/2 (one-half) cabbage head
1/4 (one-quarter) cabbage head, purple
3 medium tomatoes
4 green onions, chopped with tops
1 jalapeno pepper, seeded and diced fine
1/4 (one-quarter) cup cilantro
2 tablespoons olive oil
2 tablespoons cider vinegar

Place pieces of green cabbage in a food processor and chop until shredded fine. Remove from processor and shred purple cabbage. Place cabbage into serving bowl and add prepared tomatoes, onion, jalapeno and cilantro. Toss well. Add olive oil and vinegar. Chill until serving as a side salad. Yields 12 servings.
