Spicy Light Fries

2 large potatoes
1 Tablespoon whole wheat flour
1 teaspoon cayenne powder
Olive oil spray

Scrub potatoes well so you can leave the skin on. Dry well and cut into thin wedges. Cook quickly in a pan of boiling water for five minutes or just until softened. Drain well and dry with clean towel. Mix flour and cayenne powder in a mixing bowl. Add potato wedges and toss until evenly coated. Place fries in a single layer on lightly sprayed cookie sheet and spray top side of fries with olive oil spray. Cook in a preheated 375 degree oven twenty minutes until golden brown. Yields four servings.
