Winter Vegetable Tea Skillet

2 tablespoons olive oil
2 cloves garlic, crushed
1 cup prepared hot tea
1 vegetable bouillon cube
1 1/2 (one and one-half) cups cauliflower, cut into bite-sized pieces
2 large carrots, thickly sliced
8 pearl onions. peeled
2 medium potatoes, quartered
3/4 cup broccoli florets
8 cherry tomatoes

In large skillet, heat oil with garlic and cook until tender. Add prepared tea and bouillon cube. Arrange cauliflower, carrots, onions and potatoes in pan. Cover and simmer 15 minutes or until tender. During last eight minutes of cooking, add broccoli. During last five minutes of cooking, add tomatoes. Season with salt and pepper, if desired. Yields four servings.
