Black Bean Salad and Shredded Carrot Lettuce Wrap

INGREDIENTS
1 15-ounce can black beans, drained
1/2 (one-half) cup red pepper, diced
1/2 (one-half) cup onion, diced
1/2 (one-half) cup corn, fresh or frozen
1 Tablespoon cilantro, chopped
2 Tablespoons chopped green onion
1/4 (one-quarter) cup Southwestern salad dressing
8 leaves Bibb lettuce, washed
1/2 (one-half) cup shredded carrots

METHOD
Combine black beans, red pepper, onion, corn, cilantro and green onion. Toss with salad dressing. Spoon the black bean salad into lettuce cups. Top with shredded carrots. Serves eight.
