Okra Tomato Salad

2 cups sliced fresh okra
3 tablespoons vegetable oil
2 cups cherry tomato halves
1 cup sliced celery
2 tablespoons chopped green onion
1/4 cup apple cider vinegar
2 teaspoons low-sodium soy sauce
1 teaspoon honey
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon minced garlic
2/3 cup vegetable oil
Torn assorted lettuce

In 12-inch skillet over medium heat, cook okra in oil until lightly browned. Drain on paper towels and cool. Combine okra, tomatoes, celery and onions and toss lightly. In blender container, combine vinegar, soy sauce, seasonings and garlic. With blender running on low speed, gradually add oil, mixing until well blended. Add dressing to okra mixture and toss. Chill until ready to serve on lettuce to 6.
