Spicy Okra Fry

INGREDIENTS
1 pound okra
2 tablespoons vegetable oil
1 large onion
1/2 teaspoon crushed garlic
1 fresh jalapeno pepper, seeded and diced
1 teaspoon red chili powder
1/4 teaspoon turmeric
Salt, to taste
2 cups cooked, hot brown rice
2 tablespoons green onion, chopped

METHOD
Wash and cut okra into 1/2 inch pieces. Heat oil in a skillet, add finely chopped onion and fry until light brown. Add garlic and stir fry for a minute. Stir in prepared okra, diced jalapeno and spices. Fry on medium high heat for three minutes. Sprinkle with salt. Serve over hot rice and top with green onion. Serves 4.
