Easy Fig Bars

INGREDIENTS
1/2 cup butter or soy margarine, softened
1 cup packed brown sugar
3 large eggs or Soy Egg substitute
1 teaspoon grated lemon peel
1 teaspoon vanilla
1 cup unbleached flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups dried figs, finely chopped

METHOD
Cream butter and sugar. Add eggs, lemon peel and vanilla and beat well. In a small bowl, combine flour, baking powder, and salt. Blend into creamed mixture. Stir in figs. Pour into lightly-oiled 13-by-9-inch baking pan. Bake at 350 degrees for 25 minutes. Cool and cut into 24 bars.
