Pumpkin Pie

INGREDIENTS

2 cups crushed graham crackers
3 tablespoons low-calorie margarine
2 tablespoons brown sugar
2 teaspoons cinnamon
2 cups pumpkin puree
1 (12-ounce) can evaporated skim milk
2 eggs, beaten
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice

METHOD

Preheat the oven to 425 degrees. Combine graham crackers, margarine, sugar, and 2 teaspoons cinnamon and press into bottom and sides of a 9-inch pie plate. Place in the oven an bake for 5 minutes. Remove and set aside. Beat together all remaining ingredients in the order given. Pour into crust and bake for 15 minutes. Lower temperature to 350 degrees and bake for 35 minutes until set. Cool slightly or chill before serving to 9.
