Artichoke Mashed Potatoes

INGREDIENTS
4 large potatoes, peeled and quartered
1 tablespoon unsalted butter or vegan butter
1 (6.5-ounce) jar artichoke hearts (non-marinated and drained)
1/4 cup low-fat dairy, soy or almond milk

METHOD
Boil potatoes for 15 -20 minutes or until potatoes are tender when pierced with a fork. Drain and keep warm. In a large mixing bowl, use mixer or whisk to blend artichoke hearts, butter and milk. Add warm potatoes and blend until smooth. Add salt and pepper to taste, if desired. Yields 6 servings.
