Oatmeal Muffins

INGREDIENTS
1 cup old-fashioned oatmeal, uncooked
1/2 cup whole wheat flour
1/2 cup unbleached white flour
1/4 cup packed brown sugar or vegan sugar
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
3/4 cup buttermilk or soy buttermilk
1 egg or soy egg
1/4 cup vegetable oil
1 teaspoon vanilla

METHOD
In a large mixing bowl, combine oatmeal, flours, brown sugar, baking powder and nutmeg and mix well. Combine buttermilk, egg, oil and vanilla in a small bowl. Pour buttermilk mixture into oats mixture and stir just to moisten ingredients. Spray muffin pan with nonstick spray or use paper liners. Fill muffin cups two-thirds full. Bake in a preheated 400 degree oven 15 to 20 minutes. Yields 1 dozen.
