Apple Wldorf Salad

INGREDIENTS
1/4 cup low-fat vegan mayonnaise
1/4 cup skim, soy or almond milk
4 tart apples
1 cup chopped celery
1/4 cup walnuts, chopped
1/4 teaspoon salt
2 teaspoons maple syrup
Thinly sliced cabbage

METHOD
Combine mayonnaise and milk in serving bowl. Core one apple but do not peel. Cut into small cubes. To prevent browning add each apple to dressing as soon as diced and stir gently. Add celery, nuts, salt and sugar to apples and mix well. Chill until ready to serve mounded on a bed of cabbage or lettuce. Yields 8 servings.
