Chinese Noodle Salad

INGREDIENTS
1 small head green cabbage
1 each: sweet red, green and yellow pepper, seeded and chopped fine
2 stalks celery, chopped fine
1 bunch green onions, cleaned and chopped fine with tops
2 uncooked packages Oriental flavor Ramen noodles (keep seasoning packets for another use or discard)
2 Tablespoons olive oil
1/4 cup apple cider vinegar
1/4 cup cold water

METHOD
Prepare vegetables and place in large bowl. Crush noodles and add to salad. Combine oil, vinegar, and water and stir well. Pour over cabbage mixture and stir. Serve 12 immediately or will store for a few days.
