Multi Grain Pizza Dough

2 cups whole wheat flour
1 cup rye flour
1 cup unbleached flour
1 1/2 teaspoons salt
2 1/4 teaspoons dry active yeast
2 cups water
1/4 cup olive oil
1 cup additional unbleached flour

Mix flours, salt and yeast in large bowl. Heat water and olive oil to 125 degrees. Add to dry ingredients and blend well. Stir in enough additional flour to make soft dough. Knead on lightly floured surface for 5 minutes. Cover and let rest 10 minutes. Divide and prepare according to selected recipe. Makes 8 individual 8-inch pizzas, 2 thin-crust 14-inch pizzas or 2 thick-crust 13-by-9-inch pizzas. Lightly spray or oil pizza pans and stretch dough to edges. Top with tomato or pizza sauce, favorite chopped veggies, herbs and shredded cheese. Bake at 400 degrees until crust is golden and cheese is melted, about 15 minutes.
