Vegan Lemon Pudding

6 tablespoons agar flakes
1/2 cup cold water
1 cup boiling water
5 cups apple juice
1/2 cup maple syrup
1/2 cup fresh lemon juice
2 teaspoons grated lemon rind
1 teaspoon vanilla

Dissolve agar flakes in cold water for 10 minutes. Stir into boiling water and mix well. Add apple juice, maple syrup, lemon juice, lemon rind and vanilla. Pour into lightly sprayed or oiled mold or bowl. Chill until set, about 4 hours. Yields 8 servings.
