Vegan Scrambled Tofu

INGREDIENTS
3 cups firm tofu
4 Tablespoons KAL Nutritional Yeast Flakes
4 Tablespoons cold water
1 Tablespoons olive oil

METHOD
Heat oil in an 10-inch frying pan over medium heat. Remove tofu from package and rinse well. Place in blender container with yeast and water. Process on low until smooth. Add all at once to hot oil. Stir mixture occasionally while cooking 5-8 minutes until set. Serve hot for breakfast or cold on sandwiches. Yields 4 servings.
