Vegan Sausage Soup

1 tablespoon olive oil
2 MorningStar Farms Original Sausage Patties
2 large celery stalks, chopped
2 garlic cloves, peeled
5 cups boiling water
4 medium potatoes, peeled and cubed
2 large carrots, peeled and sliced
1 medium sweet potato, peeled and diced
1/4 cup vegan Kal Nutritional Yeast flakes
1/2 teaspoon Italian seasoning flakes
1/2 teaspoon garlic powder
1/4 teaspoon sea salt

Heat olive oil in 3-quart saucepan. Place frozen patties in pan and heat over medium. Cook on one side and flip. Add chopped celery and whole garlic cloves. Cook three minutes while stirring occasionally. Break up sausage patties into small pieces with a large spoon. Cook until sausage pieces are slightly crisp. Add boiling water and prepared vegetables, yeast flakes and seasonings. Stir well and simmer for 20 to 30 minutes or until sweet potatoes are tender. Yields 6 servings.
