Super Veggie Sandwiches for Grad Day or Anyday
RECIPES: Vegetarian BLT, Veggie Super Sub

Graduation celebrations and end-of-school parties is the perfect time to serve a variety of healthy and delicious sandwiches.
If you haven’t tried vegetarian bacon you are in for a happy surprise. Morningstar Farms makes a tasty variety called Breakfast Strips. Three crisp pieces on your Veggie BLT contains just over fifty calories with no saturated fat. They can be found in most major grocery stores in the frozen food section, usually close to the frozen waffles. Also pick up a package of frozen vegetarian sausage links or patties to make the following recipe.
Super Sub is made with low-fat cheese and tons of almost calorie-free toppings. Split a whole wheat French bread in halve lengthwise and pile on the goodies. Sliced green and black olives, pickled jalapenos, crumbled vegetarian sausage, chopped green onions and peppers are just some suggestions for this easy to make open-face sandwich.
VEGETARIAN BLT’S
12 slices Morningstar Farms Breakfast Strips
8 slices whole wheat bread
2 Tablespoons prepared mustard
2 tomatoes, sliced thin
4 lettuce leaves
Cook breakfast strips in microwave according to package directions. Watch closely and don’t allow to burn. Toast bread. Spread each slice with a small amount of mustard. On four slice of toast: top each with three cooked breakfast strips, two slices of tomato and lettuce. Cover with remaining toast and cut in half or quarters. Yields four sandwiches.
VEGGIE SUPER SUBS
1 loaf whole wheat French bread
¼ (one-quarter) cup Dijon mustard
1 eight ounce package low-fat cream cheese or soy cream cheese
6 Morningstar Farms vegetarian sausage patties or links, unthawed
2 tomatoes, sliced thin
½ (one-half) cup each: sliced green and black olives
1 small Bermuda onion, peeled and sliced into thin rings
1 medium green pepper, seeded and sliced into thin strips
½ (one-half) cup sliced fresh mushrooms
2 Tablespoons jalapeno slices
2 cups low-fat shredded cheddar cheese or soy cheddar cheese
Slice bread in halve lengthwise. Place each, cut side up, on dry cookie sheets. Spread each with mustard. Slice cream cheese into thin pieces and place over mustard. Break pieces of sausage evenly over cheese. Arrange tomato slices down center of each bread. Sprinkle with remaining ingredients in the order given. Place uncovered in a preheated 350 degree oven for ten to fifteen minutes or until cheddar cheese begins to melt. Cut into one inch pieces to serve as appetizers or larger slices to serve as sandwiches.
