RECIPES: Meatless Meatball Subs and Italian Meatball Hero

Both of my sons played football in school and I remember them always being hungry after practice, before games and after games.
Keeping a few healthful ingredients on hand in case they bring the offensive line home for a ‘snack’ before the game is always a good idea. Yes, this happened at our house.
Frozen Gardenburger Meatless Meatballs are great to have tucked in the freezer to make a couple of hearty sandwiches for the team. Add a jar of your favorite spaghetti sauce and some whole wheat rolls and you have the makings of a Meatless Meatball Sub.
Combine these vegetarian meatballs with stir fried nutritious vegetables and create a low calorie Italian Meatball Hero for your football players and fans. These delicious ‘meatballs’ are found in the freezer section usually near the frozen waffles.
Six meatless meatballs contain only 110 calories and 4.5 grams of fat. They provide 12 grams of protein and only eight grams of carbohydrates. The average calories in the same amount of beef meatballs is about 250 with 19 grams of fat. They also provide about 12 grams of protein per serving but are high in cholesterol with 40 grams.

MEATLESS MEATBALL SUBS
2 twelve-ounce packages frozen Gardenburger Meatless Meatballs
2 Tablespoons olive oil
1 thirty-ounce jar spaghetti sauce
6 whole wheat sandwich rolls
6 slices low-fat Mozzarella cheese
Heat oil in a large skillet and add frozen Gardenburger Meatless Meatballs. Thoroughly brown on all sides being careful to not break balls when turning. Pour sauce over cooked meatballs. Cover and simmer on low about twenty minutes. Split rolls in half and arrange on dry cookie sheet. Bake in preheated 350 degree oven until toasted golden brown. Fill warm rolls with meatballs and sauce. Top with cheese and bake five minutes or just until cheese melts. Serves six.
ITALIAN MEATBALL HERO
2 twelve-ounce packages frozen Gardenburger Meatless Meatballs
2 large red bell peppers
2 large green peppers
2 large yellow or white onions
2 Tablespoons olive oil
8 whole wheat hero rolls
Topping: Shredded low-fat cheese, finely chopped onion and sliced black and green olives
Arrange frozen Gardenburger Meatless Meatballs on lightly oiled or sprayed cookie sheet and bake in a preheated 350 oven for 15 to 20 minutes or until well cooked. Meanwhile, prepare vegetables. Wash, stem and seed red and green peppers. Slice into one-quarter inch strips. Peel onions and cut into thin slices. Heat oil in large skillet and stir fry peppers and onions on medium-high heat while stirring until vegetables are lightly brown but still crisp tender, about ten minutes. Slice rolls in half and toast in oven, if desired. Remove hot meatballs from oven and place in hero rolls. Pile on hot pepper mixture and top with shredded cheese, chopped onion and sliced olives. Yields eight hero sandwiches.
