What do Vegans and Vegetarians Eat for Thanksgiving?

Almost everyone these days knows someone who is a vegetarian. If you plan on inviting your vegetarian friend, family member or co-worker over for Thanksgiving you may be worried about what to cook for them.
How about a Tofurky Feast? You can find these frozen holiday meals in a box at health food stores. The feast contains a Tofurky roast made with organic soybeans, eight cranberry dumplings, vegan giblet and mushroom gravy, Tofurky wild rice stuffing and even a Wishstix to make a wish. The whole ready-to-eat vegan ‘feast’ costs $23.96 and serves four.

WHOLE WHEAT AND MUSHROOM STUFFING
1 loaf whole wheat bread
1 Tablespoon dried parsley
1 teaspoon dried sage
1 teaspoon garlic powder
½ (one-half) teaspoon dried oregano
1 Tablespoon olive oil
1 cup fresh mushrooms, sliced
1 small onion, chopped fine
1 green pepper, seeded and chopped
4 stalks celery, chopped
Cut bread into small cubes and arrange in single layer on dry cookie sheets or roaster pan. Sprinkle with parsley, sage, garlic powder and oregano. Bake in a preheated 350 degree oven for 20 minutes. Stir and bake 10 to 15 minutes more until golden brown. Remove from oven and set aside. In a large saucepan, cook vegetables in olive oil until crisp tender. Add bread cubes and stir. If you like a moist stuffing add a little water or vegetable stock to the mixture. Use as filling for Tofurky deli slices or spoon into a lightly oiled casserole dish. Cover and bake in a preheated 350 degree oven for thirty minutes or microwave for ten minutes on high. Serves eight to 12.
TOFURKY AND DRESSING ROLLS
2 5.5 ounce packages Oven Roasted Tofurky deli slices
½ (one-half) order Whole Wheat and Mushroom Dressing
1 can cranberry sauce
Arrange three slices of Tofurky so they overlap about half way on top of each other. In the center of the slices, scoop about one cup of dressing on top. Start at the front and roll the slices around the dressing to form a small log-shape. Arrange in a lightly sprayed or oiled eight inch by ten inch baking dish. Open cranberry sauce and spoon about half the can down the center of the rolls. Cover with aluminum foil and bake in a preheated 350 degree oven for 30 minutes. Remove foil and bake until slices brown slightly, about 10 minutes. Remove from oven and serve hot to eight.
