RECIPES: Super Subs, Easy Guacamole, Spicy Baked Corn Chips

By Rae Udy

Football playoffs always means great food and fun. Super Subs fills the bill and can be served as an appetizer or sandwich while watching your favorite team play.
Top whole wheat French bread with soy sausage and bacon along with a tonof low-fat veggie toppings for this filling treat. Look for vegetarian soy sausage and bacon in the freezer section near the frozen waffles in most groceries stores and health food stores.
Two Morningstar Farms Sausage Links contains 80 calories, nine grams of protein and one net carbohydrate. Morningstar Farms Breakfast Bacon Strips contain 60 calories, two grams of protein and one net carbohydrate for two crisp slices. Both are very low in fat and contain no cholesterol. They are also a great source for B vitamins. Like pork sausage and bacon, these soy alternatives are a bit high in sodium.
By comparison, four-ounces of pork sausage contains 540 calories, 21 grams protein and 50 grams of fat, while bacon contains 100 calories, five grams protein, and eight grams fat in two slices.
There are many other brands of soy based sausage available, all are vegetarian freindly and some are vegan. Boca, Loma Linda and Worthington Foods all have equally delicious and nutritious varieties available at health food stores and supermarkets.
Easy Guacamole and Spicy Baked Corn Chips add to the football fun. Hope your team wins!

SUPER SUBS
1 large loaf whole wheat French bread
1 eight-ounce package low-fat cream cheese or soy cream cheese
1 package soy sausage
½ (one-half) package soy bacon
1 large tomato, sliced thin
1 large green pepper, seeded and chopped
1 medium purple onion, peeled and sliced into rings
½ (one-half) cup sliced green olives
½ (one-half) cup sliced black olives
1 cup low-fat shredded Cheddar cheese or soy cheese
¼ (one-quarter) cup sliced jalapeno pepper, if desired
Dash of garlic powder, chili powder, salt and pepper
Cook sausage and bacon in microwave according to package directions. Cut sausage into small bite-size pieces and crumble bacon. Set aside. Cut French bread in half lengthwise and place both pieces cut side up on cookie sheet. Spread each with cream cheese. Sprinkle each halve with soy sausage then crumbled soy bacon pieces. Arrange tomato, green pepper, onion, olives and cheese to cover entire surface of each bread piece. Place jalapeno peppers in line down the center about one-half inch apart. Sprinkle lightly with spices. Bake uncovered in preheated 350 degree oven until cheese melts, about twenty minutes. Remove from oven and slice into one-inch strips for appetizers or three-inch strips for sandwiches.

EASY GUACAMOLE
2 large avocados
1 teaspoon lemon juice
¼ (one-quarter) cup mild hot sauce
¼ (one-quarter) cup low-fat mayonnaise
Peel and seed ripe avocados. Place in serving bowl and mash with fork. Sprinkle with lemon juice. Stir in hot sauce. Spread mixture smooth in bowl. Top with mayonnaise and spread evenly over top to seal edges. This will prevent browning of avocados. When ready to serve, stir in mayonnaise and use as dip for warms chips.

SPICY BAKED CORN CHIPS
12 frozen corn tortillas
Garlic salt, cayenne pepper and chili pepper
Salt
Preheat oven to 400 degrees. Cut frozen tortillas into wedge shapes. Arrange in a single layer on cookie sheets. With a spray water bottle, slightly moisten wedges. Sprinkle with spices. Bake on top rack of oven for two to three minutes or until crisp. Check often to prevent burning. Serve warm.
