This year September 10th is the special day. <\/strong><br \/>\n\tLast year I wrote about my maternal grandparents and now I would like to honor my grandparents from my dad\u00e2\u20ac\u2122s side of the family.<br \/>\n\t<strong>Grandma Udy was named Phoebe Louise Nish, (1899-1987), and she grew up in Plymouth, Utah and lived in the area her whole life. She was a talented musician and played piano and organ for her church for many years. She was also a member of the Plymouth Orchestra who would perform at musicals and dances. She was an excellent singer as well. <\/strong><br \/>\n\tHer hobbies included crochet, knitting and quilting. She also enjoyed cooking for her family and friends. Grandma was a great cook but she was  famous for her Vinegar Taffy. This recipe is written just as she gave it to me many years ago. She always said pulling taffy was part of her exercise program.<br \/>\n\t<strong>Grandma was ahead of her time in health related matters. She always banned smoking in the house and although Grandpa and most of her children did smoke, they would respect her wishes and go outside to smoke. In the cold Utah winters Grandma would allow smoking on the stair landing by the back door. I still remember chuckling at the sight of grandpa, my dad and my uncles huddled in the tiny four by six foot room with their cigarettes going full steam.<\/strong><br \/>\n\tGrandpa Melvin, (1915 &#8211; 1986), was also from the Plymouth, Utah area. Grandpa and Grandma were married October 3, 1917 and celebrated over 69 happy years together. Grandpa owned and operated a large farm in West Fielding, Utah and harvested a great amount of hay and grain each year.<br \/>\n\t<strong>There were always a number of animals on Grandpa\u00e2\u20ac\u2122s farm and for us city girls it was always a treat to stop by and see his horses, cows and chickens. I don\u00e2\u20ac\u2122t really remember Grandpa doing any cooking because he was always too busy on the tractor. He did love to gather fresh mushrooms growing on his land. I wouldn\u00e2\u20ac\u2122t recommend gathering your own mushrooms as he did, but I think you will like Grandpa Melvin\u00e2\u20ac\u2122s Mushrooms as a side dish or to top baked potatoes.<\/strong><br \/>\n\tGrandpa and Grandma Udy were blessed with six children. Melvin LeRon was the oldest and he retired from Hill Air Force Base, in Clearfield, Utah as an airplane and engine mechanic. He passed away in October, 2005. John Udy, (82), lives in Ogden, Utah and was a pilot in the Air Force during WWII. He attained the rank of captain and is now retired and enjoying life with his family. Eldest daughter is Elma Louise Farber, (80), and she lives in Las Vegas, Nevada.<br \/>\n\t<strong>My dad, Verl Nish Udy, (1924-1965), served in the Navy during WWII as a submarine mine man. He worked as an airplane electrician at Hill Air Force Base until his death.<\/strong><br \/>\n\tYoungest son Carl J. Udy, (1926-2005), served in the Army and worked in mines and farming. He enjoyed travel and had many stories to tell. The baby of the family, Joyce Bost, (74), lives in Palos Verde, California and is retired from the nursing profession.<br \/>\n\t<strong>Although my grandparents are no longer living they will always be remembered when I make one of their favorite recipes. <\/strong><br \/>\n<img src='\/wp-content\/grandmaUdyweddingphoto.jpg' alt='' \/><br \/>\n<strong>Grandpa Melvin and Grandma Phoebe&#8217;s wedding day, October 3, 1917.<\/strong><\/p>\n<p>GRANDMA PHOEBE\u00e2\u20ac\u2122S VINEGAR TAFFY<br \/>\n2 cups sugar<br \/>\n\u00c2\u00be (three-quarters) cup white vinegar<br \/>\n\u00c2\u00bc (one-quarter) cup water<br \/>\n1 Tablespoon butter<br \/>\nMix together in saucepan. Boil until syrup forms a firm ball when dropped in cold water. This is the secret. If you don\u00e2\u20ac\u2122t cook it long enough it won\u00e2\u20ac\u2122t set up when you stretch it. If you cook it too long it will be brittle. Pour into a buttered cookie sheet to cool. Start pulling as soon as it\u00e2\u20ac\u2122s cool enough to handle. Stretch with lightly buttered hands until taffy is white. Form into one long roll and lay on a clean dish towel. Put a little flour on towel, then it won\u00e2\u20ac\u2122t stick. When taffy is firm, break or cut into three dozen bite-size pieces. <\/p>\n<p><strong>GRANDPA MELVIN\u00e2\u20ac\u2122S MUSHROOMS<br \/>\n2 Tablespoons peanut oil<br \/>\n2 cups fresh mushrooms, washed and wiped dry<br \/>\n\u00c2\u00bd (one-half) cup chopped onion<br \/>\nHeat oil in a skillet. Add mushrooms and onion. Stir fry until mushrooms begin to brown. Serve hot as side dish or topping for baked potatoes. Yields two cups.<\/strong><br \/>\n<img src='\/wp-content\/fiftyyearanniversayUdys.jpg' alt='' \/><br \/>\n<strong>Grandparents, Melvin A. and Phoebe L.
