Apples are a food energy bargain with about fifty to sixty calories each and they contain no cholesterol or fat. Loaded with potassium and vitamin C, its easy to understand why an apple a day helps keep the doctor away.<\/strong><br \/>\nRed and Golden Delicious apples are best for eating fresh rather than baking. These varieties taste great in Apple Almond Pancakes and Apple Waldorf Salad.<br \/>\n<strong>Granny Smith, McIntosh and other tart apples hold their shape while baking and are perfect for side dish Glazed Apples and Vegetables. Apple Cobbler is a warm and satisfying dessert fit for family and friends.<\/strong><br \/>\nApples are so versatile you can serve them as pancakes for breakfast, in a salad for lunch, as a side dish with dinner and there is always apple desserts.<\/p>\n<p><strong>APPLE ALMOND PANCAKES<br \/>\n\u00c2\u00bd (one-half) cup whole wheat flour<br \/>\n\u00c2\u00bd (one-half) cup unbleached white flour<br \/>\n1 Tablespoon brown sugar<br \/>\n1 \u00c2\u00bd (one and one-half )teaspoons baking powder<br \/>\n\u00c2\u00bc (one-quarter) teaspoon salt<br \/>\n2 eggs<br \/>\n4 tablespoons corn oil<br \/>\n\u00c2\u00bd (one-half) cup buttermilk<br \/>\n\u00c2\u00bd (one-half) cup apple juice<br \/>\n\u00c2\u00bc (one-quarter) cup chopped almonds<br \/>\nCombine flours, sugar, baking powder and salt in a mixing bowl. Beat eggs with oil, buttermilk and apple juice. Stir into flour mixture with nuts until all ingredients are just moistened, do not over stir. Spoon about one-third cup batter onto a hot, lightly oiled griddle. Turn once when bubbles appear. Serve warm with maple syrup. Yields 8 to 10 pancakes.<\/strong><\/p>\n<p>APPLE WALDORF SALAD<br \/>\n\u00c2\u00bc  (one-quarter) cup low-fat mayonnaise<br \/>\n\u00c2\u00bc (one-quarter) cup low-fat milk<br \/>\n1 pound tart apples<br \/>\n1 cup chopped celery<br \/>\n1\/4 cup walnuts, chopped<br \/>\n2 tablespoons maraschino cherries, chopped<br \/>\n1\/4 teaspoon salt<br \/>\n2 teaspoons sugar<br \/>\nLettuce<br \/>\nCombine mayonnaise and milk in serving bowl. Core one apple but do not peel. Cut into small cubes. To prevent browning add each apple to dressing as soon as diced and stir gently. Add celery, nuts, cherries, salt and sugar to apples and mix well. Chill until ready to serve mounded on a bed of lettuce. Yields eight servings.<\/p>\n<p><strong>GLAZED APPLES AND VEGETABLES<br \/>\n2 cups carrots, peeled and thinly sliced diagonally<br \/>\n1 cup zucchini, sliced<br \/>\n3 Tablespoons water<br \/>\n2 cups apple, cored, peeled and thinly sliced<br \/>\n\u00c2\u00bc (one-quarter) cup brown sugar<br \/>\n1 teaspoon cornstarch<br \/>\n\u00c2\u00bd (one-half) teaspoon ground cinnamon<br \/>\n2 teaspoons margarine or butter<br \/>\nCombine carrots and zucchini in a one-quart microwave dish. Pour in water. Cook covered on high for three minutes or until carrots are crisp-tender. Drain mixture. Gently toss apples into the vegetable mixture. In a small mixing bowl, combine brown sugar, cornstarch, cinnamon, and cut in margarine with fork. Sprinkle mixture over top of apple-vegetable mixture. Cover and microwave on high for three minutes. Gently toss mixture, coating apples and vegetables with the glaze. Cook uncovered two minutes or until glaze thickens. Yields six servings.<br \/>\n<\/strong><br \/>\nAPPLE COBBLER<br \/>\n4 cups thinly sliced peeled apples<br \/>\n\u00c2\u00bd (one-half) cup sugar<br \/>\n1 teaspoon ground cinnamon<br \/>\n1 cup sifted unbleached white flour<br \/>\n\u00c2\u00bd (one-half) cup sugar<br \/>\n1 teaspoon baking powder<br \/>\n\u00c2\u00bc (one-quarter) teaspoon salt<br \/>\n1 egg, well beaten<br \/>\n\u00c2\u00bd (one-half) cup evaporated milk<br \/>\n1\/3 cup melted butter<br \/>\nPlace apples in bottom of a lightly oiled eight-inch round baking dish. Sprinkle with sugar and cinnamon. Mix flour, sugar, baking powder and salt together in a mixing bowl. In a small bowl, combine egg, milk and butter. Add to dry ingredients all at once, and mix just until smooth. Pour batter over apples. Bake in a preheated 325 degree oven for about one hour, or until a toothpick inserted in the middle comes out clean.
