These easy to make main dishes satisfy even the most finicky eaters and require little effort to make when using a crock pot or slow cooker.<\/strong><br \/>\nVegetarian Chili combines nutritious veggies and high protein beans all in one pot to create a spicy low-fat version of the southwest staple. Serve with warm whole wheat tortillas for a hearty meal.<br \/>\n<strong>Crock Pot Chic\u00e2\u20ac\u2122n Stew makes use of MorningStar Farms new frozen vegetarian chicken strips. Find these is most grocery stores in the frozen section near the waffles. <\/strong><br \/>\nCrock Pot Potato Soup is a creamy delight rich is calcium and vitamin A. Serve with low salt crackers and low-fat cheese to complete the meal.<\/p>\n<p><strong>VEGETARIAN CHILI<br \/>\n2 teaspoons olive oil<br \/>\n1 large onion, chopped<br \/>\n1 medium green bell pepper, chopped<br \/>\n1 zucchini, thinly sliced<br \/>\n1 cup corn kernels<br \/>\n1 14 ounce canned tomatoes<br \/>\n3 teaspoons soy sauce<br \/>\n2 teaspoons chili powder<br \/>\n1 teaspoon cumin<br \/>\n\u00c2\u00bd (one-half) teaspoon each: oregano and basil<br \/>\n\u00c2\u00bc (one-quarter) teaspoon thyme<br \/>\ndash of cayenne<br \/>\n2 16 ounce canned kidney beans<br \/>\nTOPPINGS: Low fat shredded cheese, chopped green pepper, sour cream, finely chopped green onion and tops or chopped cilantro<br \/>\n12 warm whole wheat flour tortillas<\/strong><\/p>\n<p><strong>Heat oil in very large skillet. When hot, add onion and green pepper and cook over moderately low heat until the onion is translucent. Add the remaining ingredients and stir. Simmer over very low heat for 15 minutes, stirring occasionally. Serve in bowls garnished with your choice of the toppings listed. Serve with warm whole wheat tortillas and pass hot sauce, if desired. Yields eight servings.<\/strong><\/p>\n<p>CROCK POT CHIC\u00e2\u20ac\u2122N STEW<br \/>\n1 package frozen MorningStar Chic\u00e2\u20ac\u2122n Strips<br \/>\n2 cans fat-free vegetable broth<br \/>\n3 cups peeled cubed potatoes<br \/>\n1 cup chopped onion<br \/>\n1 cup sliced celery<br \/>\n1 cup thinly sliced carrots<br \/>\n1 teaspoon paprika<br \/>\n\u00c2\u00bd (one-half) teaspoon each: pepper, sage and dried thyme<br \/>\n1 6 ounce can no salt tomato paste<br \/>\n\u00c2\u00bc (one-quarter) cup cold water<br \/>\n3 tablespoons cornstarch<br \/>\nIn a slow cooker, combine all ingredients except water and cornstarch. Cover and cook on High temperature for two hours. Mix water and cornstarch until smooth and stir into stew. Cover and cook 30 minutes more or until the vegetables are tender and soup is thickened. Yields eight servings.<\/p>\n<p><strong>CROCK POT POTATO SOUP<br \/>\n6 potatoes, peeled and cut into pieces<br \/>\n2 small onions, chopped<br \/>\n3 carrots, diced<br \/>\n2 celery stalks, chopped<br \/>\n1 quart water<br \/>\n4 vegetable bouillon cubes<br \/>\n1 tablespoon parsley flakes<br \/>\n1 teaspoon salt<br \/>\npepper, to taste<br \/>\n1\/4 (one-quarter) cup butter<br \/>\n13 ounces evaporated milk<\/strong><\/p>\n<p><strong>Combine all of the above in slow cooker, except evaporated milk, and cook on Low 10 hours or High three hours. During the last hour add evaporated milk and stir well. Cover and cook until vegetables are tender. Serve with grated Parmesan cheese sprinkle on top.
