These anti-inflammatory pain reliever compounds are known to have similar activity as aspirin and ibuprofen. Eating about 20 tart cherries a day could reduce inflammatory pain and provide antioxidant protection.<\/strong><br \/>\nEvidence from studies from University of Iowa in Iowa City show cherries are so powerful they may reduce the risk of cancer by fifty percent. \u00e2\u20ac\u0153It appears that cherries shut down the growth of cancer cells by depriving them of the proteins they need to grow,\u00e2\u20ac\u009d states biochemist Raymond Hohl, M.D.<br \/>\n<strong> Cherries are true nutritional powerhouses. In a serving size of 100 grams or about 3.5 ounces, fresh tart cherries contain just 45 calories and almost no fat. They also provide potassium, fiber, vitamin A and C, and a small amount of protein.<\/strong><br \/>\nCherry Salsa adds some sweetness and spice to serve with crisp corn chips for a fun appetizer. Cherry Rice Pilaf is a great vegetarian main dish ready to serve in minutes when using instant brown rice. No Bake Cherry Cheesecake Squares is a very easy dessert to whip up for any occasion but especially on Presidents Day.<\/p>\n<p><strong>Cherry Salsa<br \/>\n1 \u00c2\u00bd (one and one-half) cups frozen unsweetened tart cherries<br \/>\n\u00c2\u00bc (one-quarter) cup finely chopped red onion<br \/>\n1 tablespoon chopped fresh jalapenos<br \/>\n1 clove garlic, finely chopped<br \/>\n1 tablespoon chopped fresh cilantro<br \/>\n1 teaspoon cornstarch<br \/>\nCoarsely chop frozen tart cherries. Let cherries thaw and drain well, reserving one tablespoon cherry juice. When cherries are thawed, combine drained cherries, onion, jalapenos, garlic and cilantro in a medium saucepan and mix well. Combine reserved cherry juice and cornstarch in a small bowl and mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over medium-high heat until mixture is thickened. Let cool. Yields about one cup.<br \/>\n<\/strong><br \/>\nCherry Rice Pilaf<br \/>\n1 cup chopped onion<br \/>\n1 cup chopped celery<br \/>\n\u00c2\u00bd (one-half) cup dried tart cherries<br \/>\n\u00c2\u00bd (one-half) cup chopped walnuts<br \/>\n1 teaspoon dried thyme<br \/>\n1 teaspoon dried marjoram<br \/>\n\u00c2\u00bd (one-half) teaspoon ground black pepper<br \/>\n1 tablespoon low-fat margarine<br \/>\n3 cups cooked brown rice<br \/>\nPlace onion, celery, cherries, walnuts, thyme, marjoram, pepper and margarine in a large nonstick skillet. Cook, uncovered, over medium heat for 10 minutes, or until vegetables are tender. Stir occasionally. Add rice and mix well. Cook five minutes more, or until thoroughly heated. Yields six servings.<\/p>\n<p><strong>No Bake Cherry Cheesecake Squares<br \/>\n1 \u00c2\u00bc (one and one-quarter) cups graham cracker crumbs<br \/>\n\u00c2\u00bd (one-half) cup granulated sugar, divided<br \/>\n1\/3 cup butter or margarine, melted<br \/>\n1 3-ounce package cream cheese, softened<br \/>\n2 teaspoons grated lemon peel<br \/>\n1 teaspoon vanilla extract<br \/>\n2 cups frozen whipped topping, thawed<br \/>\n1 21-ounce can cherry filling and topping<br \/>\n1\/2 (one-half) teaspoon almond extract<\/strong><\/p>\n<p><strong>In a medium bowl, combine graham cracker crumbs, one-quarter cup sugar and melted butter and mix well. Press crumb mixture firmly into the bottom of a nine inch square baking pan. Let crust chill while preparing the rest of the ingredients. In a mixing bowl with an electric mixer, combine cream cheese, remaining sugar, lemon peel and vanilla. Beat until light and fluffy. Fold in whipped topping. Pour into prepared crust. Combine cherry filling and almond extract. Pour over cheese filling. Let chill until ready to serve.
