The following recipes rely on delicious noodles for a hearty omelet breakfast, a traditional noodle soup, and a low-fat but decadent dessert.<\/strong><br \/>\nCalifornia Noodle Breakfast is a different and delicious way to start the day. Low-fat vegetables add flavor and nutrition to this fun and easy-to-make omelet style dish. One serving provides over 25 grams protein.<br \/>\n<strong>Egg Drop Noodle Soup is ready in less than ten minutes but tastes like a big production. Each cup provides 26 grams of protein, this is 52 percent of daily value based on a 2000 calorie diet.<\/strong><br \/>\nApple Noodle Kugels with Raspberry Filling contain only 124 calories and one gram of fat in each sweet treat. Each healthful dessert provides 10 percent of your daily value needed for B1, seven percent of Vitamin A and five grams of protein.<br \/>\nSoy, spinach, whole wheat and rice noodles add variety to an already versatile food.<\/p>\n<p><strong>CALIFORNIA NOODLE OMELET<br \/>\n2 teaspoons vegetable oil<br \/>\n2 large eggs<br \/>\n1 tablespoon ginger, slivered<br \/>\n1 green onion, thinly sliced (reserve one teaspoon for garnish)<br \/>\n1 cup noodles, cooked<br \/>\n6 snow peas<br \/>\n4 baby corn<br \/>\n1 tomato, sliced<br \/>\n1 tablespoon soy sauce<br \/>\n1 tablespoon cilantro, minced<br \/>\nAdd one teaspoon oil to saucepan over medium heat. Crack eggs into a small cup and beat well. Add eggs to hot oil cooking until set on one side, do not stir. Flip omelet over and cook other side for about one minute. Remove from heat and slice into strips. Add remaining oil to pan. Add ginger, green onions, baby corn, and snow peas. Cook over medium heat until ginger is fragrant and snow peas turn bright green, about 1 minute. Add noodles and cook and stir constantly until warm. Add egg strips, tomatoes and soy sauce. Stir over heat until hot, about three minutes. Before serving, sprinkle with chopped cilantro and garnish with onion slices. Yields two servings.<br \/>\n<\/strong><br \/>\nEGG DROP NOODLE SOUP<br \/>\n8 ounces medium egg noodles, uncooked<br \/>\n1 14 1\/2-ounce cans low-sodium vegetable broth (fourteen and one-half ounces)<br \/>\n6 cups water<br \/>\n2 large eggs<br \/>\n4 tablespoons water<br \/>\n\u00c2\u00bd (one-half) cup grated Parmesan cheese<br \/>\n\u00c2\u00bd (one-half) teaspoon freshly ground black pepper<br \/>\n1 cup frozen chopped spinach, thawed and drained well<br \/>\nSalt to taste<br \/>\nIn a medium saucepan, heat broth and water to a boil. Stir in egg noodles and cook according to package directions, about seven minutes. Meanwhile, beat eggs and water together until blended. Add Parmesan cheese and pepper and stir well. Stir spinach into the broth and reheat to boiling. Pour egg mixture into the soup slowly while stirring constantly with a fork. Cook 30 seconds. Check the seasoning and add salt if desired. Serve hot to eight.<\/p>\n<p><strong>APPLE NOODLE KUGELS WITH RASPBERRY FILLING<br \/>\n4 ounces medium egg noodles, uncooked<br \/>\n\u00c2\u00bd (one-half) cup egg substitute<br \/>\n3 tablespoons sugar<br \/>\n\u00c2\u00bc (one-quarter) teaspoon ground cinnamon<br \/>\nPinch nutmeg<br \/>\n\u00c2\u00bd (one-half) cup low-fat cottage cheese<br \/>\n1\/3 cup applesauce<br \/>\n\u00c2\u00bc (one-quarter) cup chopped dried apples<br \/>\n18 teaspoons raspberry jam<br \/>\nPreheat oven to 350 degrees. Prepare egg noodles according to package directions. While the noodles are cooking, beat egg substitute, sugar, cinnamon and nutmeg in a large bowl until the sugar is dissolved and the mixture is foamy. Fold in cottage cheese, applesauce and chopped dried apple. Lightly spray a muffin tin with vegetable oil cooking spray. Do not use baking cups. Drain noodles in a colander and immediately add to apple mixture. Fill each muffin tin one-half full. Add two teaspoons raspberry jam to each cup, then fill the muffin cups to full with batter. Bake until firm and the tops are golden brown, about 45 minutes. Serve warm.
