Once fully ripe a tomato can be chilled, but only for a few days to prevent loss of flavor. <\/strong><br \/>\nTo hasten ripening you can place the tomatoes in a brown bag until they give slightly when squeezed. Also storing tomatoes next to bananas will make them both ripen quicker.<br \/>\n<strong> Look for locally organic grown tomatoes at the Farmers Market or check the newspaper produce ads for tomatoes in bulk.<\/strong><br \/>\nIf you are in the mood for a tasty and easy-to-make hot sauce you\u2019re in luck. Laura Dopson, a friend from the Eagles Lodge in town, makes the best. When the tomatoes start growing in our area, everyone at the Lodge looks forward to Laura\u2019s Homemade Hot Sauce with corn chips. The blender does the hard work in this unique recipe and the flavor is outstanding.<br \/>\n<strong>If you haven\u2019t got any fresh tomatoes, go ahead and cheat a little and use canned tomatoes for Fifty Calorie Tomato Sauce. This delicious sauce is great to have on hand in the fridge and just heat it up to serve over hot pasta, on prepared pizza dough or add to a quick summer soup.<\/strong><\/p>\n<p><a href=\"http:\/\/www.tomato.org\">www.tomato.org<\/a><\/p>\n<p><strong>LAURA DOPSON\u2019S HOMEMADE HOT SAUCE<br \/>\n\u00bd (one-half) cup vinegar<br \/>\n\u00bd (one-half) teaspoon sugar<br \/>\n1 teaspoon salt<br \/>\n\u00bc (one-quarter) cup onions<br \/>\n3-5 jalapeno peppers, diced<br \/>\nBlender container full of tomatoes, cored and skinned (you can drop them into a pan of hot water and the skin will come right off or some people do not skin tomatoes for this recipe)<\/strong><\/p>\n<p><strong>Place tomatoes in blender container along with all other ingredients. Blend until smooth liquid. Pour into a large saucepan and cook on medium heat until thick, stirring occasionally. Makes about two jars of hot sauce but this recipe can be doubled or tripled as needed to can the hot sauce in jars. Since this recipe contains no preservatives, hot sauce must either be eaten quickly and kept refrigerated, or canned in jars. Jars keep indefinitely because they&#8217;ve been sealed in the canning process.<br \/>\n<\/strong><br \/>\nFIFTY CALORIE TOMATO SAUCE<br \/>\n2 16-ounce can plum tomatoes, do not drain<br \/>\n1 small onion, peeled and diced<br \/>\n2 cloves garlic, peeled and finely chopped<br \/>\n1 teaspoon dried basil<br \/>\n\u00bc (one-quarter) teaspoon hot red pepper flakes<\/p>\n<p>Combine tomatoes, onion, garlic, basil and red pepper flakes in a two-quart saucepan and heat to boiling. Reduce heat and simmer until reduced by half, approximately 20 minutes. In a food processor or blender, process small quantities of the sauce on low speed to desired consistency, using three or four quick on-off motions for a chunky sauce, longer for a smoother sauce. Be careful sauce will be hot. Prepare pasta according to package directions.<br \/>\nWhen pasta is done, drain. Pour sauce over pasta and serve immediately.
