All the sugary goodies is almost more than one can resist, especially the kids. The easiest solution is to offer nutritious fun-to-eat treats.<\/strong><br \/>\n\tBunny Buns are as much fun for the kids to make as they are to eat.  Make these cute bunnies in advance and decorate with healthy nuts and raisins.<br \/>\n\t<strong>Easter Sundae Cones are filled with frozen yogurt and topped with finely chopped nuts, tinted coconut or carob mini-morsels. Keep wrapped in the freezer until ready to serve wide-eyed youngsters of all ages.<\/strong><br \/>\n\tMake the table even more festive by placing Easter decorations around a centerpiece of ready-to-eat fruit.  Enjoy a happy and healthy Easter.<\/p>\n<p><strong>BUNNY BUNS<br \/>\n4 cups unbleached white flour, divided<br \/>\n\u00c2\u00bd (one-half) cup brown sugar<br \/>\n2 Tablespoons dry active yeast<br \/>\n1 teaspoon ground cinnamon<br \/>\n\u00c2\u00bd teaspoon ground nutmeg<br \/>\n\u00c2\u00bc (one-quarter) teaspoon salt<br \/>\n\u00c2\u00bd (one-half) cup raisins<br \/>\n1 \u00c2\u00bd (one and one-half) cups milk or soy milk<br \/>\n\u00c2\u00bc (one-quarter) cup corn oil<br \/>\n2 eggs or soy egg substitute<br \/>\nIn a large bowl, combine two cups flour, brown sugar, yeast, spices, salt and raisins. Stir and set aside. Combine milk and oil and heat in microwave for one minute or until warm. Gradually add to dry ingredients, beating at least ten minutes. Add eggs and one cup of remaining flour, stir until well mixed.  Add remaining cup of flour to make a stiff dough. Cover with a warm, damp towel and set aside to rise for thirty minutes. Punch dough down and divide into ten equal portions. From each part form a round ball for a head, a larger one (about one and one-half inches) for the body, two ears the size of large jelly beans, and a tiny ball for the tail. On lightly greased or sprayed cookie sheets assemble bunnies leaving plenty of room between each one. Let rise uncovered until double in size, about twenty minutes. Bake in a preheated 375 degree oven for fifteen to twenty minutes or until golden brown. Cool completely before frosting and decorating. If tails or ears fall off while baking, \u00e2\u20ac\u02dcglue\u00e2\u20ac\u2122 them on with a little frosting. Yields ten.<\/strong><\/p>\n<p>EASTER SUNDAE CONES<br \/>\n\u00c2\u00bd (one-half) gallon frozen yogurt, vanilla or other flavors or soy frozen yogurt<br \/>\n1 package ice cream cones<br \/>\n\u00c2\u00bd (one-half) cup shredded coconut, tinted in Easter colors<br \/>\n\u00c2\u00bd (one-half) cup carob chip mini-morsels<br \/>\n1 small jar Maraschino cherries, drained well<br \/>\nSoften frozen yogurt for ten minutes at room temperature. Fill cones with mounded yogurt. Roll each in a different topping or a combination of any or all. Place a drained cherry on top. Wrap each in plastic warp and freeze upright until firm. Yields about two dozen cones.<\/p>\n<p><strong>TINTED COCONUT: Combine one tablespoon water and two to four drops desired food color in quart jar with a lid. Add one-half cup shredded coconut. Cover and shake until evenly colored.
