Green peas are a good source of calcium, vitamin C and thiamine. Try surrounding the dip with fresh baby carrots, celery sticks and pepper strips instead of chips for snacking.<br \/>\n\t<strong>Open up a couple of cans of low-salt pinto beans and have Refried Beans in just minutes. This recipe calls for olive oil instead of the traditional use of lard so the dish remains low in fat and cholesterol. Pinto beans provide about 12 grams of protein per cup and they are also high in vitamin A, iron and niacin. <\/strong><br \/>\n\tTake advantage of quick-cooking brown rice and Spanish Rice is ready in ten minutes. Brown rice provides protein, calcium and iron and adds a delicious crunch to the meal.<br \/>\n\t<strong>Enjoy these quick and easy recipes on May 5th or anytime.<\/strong><\/p>\n<p>MOCK GUAC<br \/>\n1 box frozen green peas, thawed<br \/>\n1 Tablespoon lemon juice<br \/>\n2 medium tomatoes, chopped coarse<br \/>\n2 Tablespoons red onion, chopped<br \/>\n\u00c2\u00bc (one-quarter) cup mild hot sauce or Picante sauce<br \/>\nPlace peas, lemon juice, tomatoes, onion and hot sauce into blender or processor container. Cover with lid and process on low speed until mixture is smooth. Pour into small serving bowl and spread level. Place in the center of a large platter and surround with warm, crisp corn chips, low-fat cheese or crunchy vegetables. Serves six. <\/p>\n<p><strong>REFRIED BEANS<br \/>\n2 fifteen-ounce cans low-salt pinto beans<br \/>\n2 Tablespoons olive oil<br \/>\n\u00c2\u00bc (one-quarter) cup finely chopped onion<br \/>\n2 garlic cloves, peeled and minced<br \/>\n\u00c2\u00bc (one-quarter) cup chunky hot sauce<br \/>\nDrain beans but reserve liquid. Heat a heavy skillet over medium heat and add oil. When oil is hot, add onion and garlic. Cook and stir one minute then add drained beans. Mash beans with a potato masher while cooking. Add reserved liquid in small amounts until the texture of the beans is smooth and creamy. Keep warm until served to six.<\/strong><\/p>\n<p>SPANISH RICE<br \/>\n1 Tablespoon olive oil<br \/>\n1 cup quick-cooking brown rice<br \/>\n2 Tablespoons chopped onion<br \/>\n2 Tablespoons green pepper, seeded and chopped<br \/>\n1 clove garlic, peeled and minced<br \/>\n\u00c2\u00bd (one-half) cup water<br \/>\n\u00c2\u00bd (one-half) cup tomato sauce<br \/>\n2 Tablespoons mild hot sauce<br \/>\nIn a large skillet, heat oil over medium heat. Add rice, onion, green pepper and garlic. Cook and stir until rice is golden brown and vegetables are crisp tender. Add water, tomato sauce and hot sauce to rice. Bring to boil. Reduce heat to low and cook covered for ten minutes or until rice is tender and all water is absorbed.
